Mardi Gras is only a few days away and these delicious Sweet Potato Fries are a great way to Let the Good Times Roll. I served them up last year as a side dish to Rockfish in Cajun Garlic Butter Sauce. Soooooo good!!
This is a wonderful side dish for any meal that you are enjoying. Seasoned with onion, garlic, thyme, and oregano with just a hint of heat from cayenne these are a potato lover's dream. Change up the ordinary fries you normally serve with these Cajun Spiced Sweet Potato Fries and watch your family's faces light up.
Cajun Sweet Potato Fries
Ingredients
- 3 T. canola oil, divided
- 4 Sweet Potatoes, peeled and cut into thin strips
- salt and pepper, to taste
- 2 t. sweet paprika
- 2 t. onion powder
- 1 t. garlic powder
- 1 t. thyme
- 1/2 t. oregano
- dash of cayenne, to taste
Instructions
- Place the potato slices in a large bowl and cover with cold water. Soak for half an hour, drain, and pat dry.
- Dry the bowl and return the dry potato slices to it with 2 Tablespoons of the oil, the salt, pepper, onion powder, garlic powder, paprika, thyme, oregano. and cayenne. Toss to coat.
- Brush the remaining oil onto a baking sheet large enough to hold the potatoes, leaving space between each slice.
- Bake in a preheated 425* oven for about half an hour, until tender and golden brown.
- Transfer to a serving bowl and toss with a little more salt before serving.

DeleteSo nutritious and love the spices in these! I think cayenne is my most used spice besides S&P.
ReplyDeleteI have to use a light hand because of Frank's sensitivity to heat but it does add a lot of zing to a recipe.
DeleteI simply adore that you didn't use a store-bought Cajun seasoning for these fries...because I have never been a fan of them...always too salty. With this recipe, I won't have to worry about that. And, that fish...sounds AMAZING too!!!
