We went to visit our son, Chuck, earlier this month. Chuck lives in Virginia and the first night that we were there we decided to watch a movie. I requested that we watch Hidden Figures as I had chosen it for our Movies and Munchies film this month.
I told him that I was going to make a recipe inspired by the movie and he said "Just make Fried Chicken, it's a movie about black women in Virginia". Sure enough, the very first food scene was a gathering at a church picnic and the first food on the table was Fried Chicken.
Then when I got home from this trip and was going through the mail I saw that my DELISH magazine had arrived and as fate would have it, this edition is all about chicken. The third recipe in the magazine was for Waffle Batter Fried Chicken. My choice was made!!!!!
I had watched this film at the theater when it first came out in 2017 and enjoyed it. When I was flipping through the tv channels looking for a movie to choose for this month's Movies and Munchies, I saw that it was streaming on Disney+ and decided to invite the others to watch it with me for the March event.
I thought that it was an appropriate choice for this month as we celebrate National Woman's Month. I hope the others agree with me and enjoy the film as much as I.
This movie takes place during John Glenn's first flight into outer space. It tells the story of NASA who had hired the brightest and the best to make this manned flight happen and get back into competition with Russia's space exploration.
Some of the brightest and the best were black females who were hired and then hidden in a back barrack, segregated from the other scientists and staff. There were very few female scientists acknowledged during this time and certainly no women of color.
This true story is about 3 of these women who were recognized and brought out of segregation due to their brilliance, determination and abilities. This lead to not only a successful flight for John Glenn but for the desegregation of all NASA employees.
It is a great film and I enjoyed watching it again. It is a great movie to watch with your kids and grandkids who may not understand the history and challenges that women and the black community had in our country until just recently.
Prior to this film I had never heard of Katherine Johnson, Dorothy Vaughan and Mary Jackson. Everyone in this country has, of course, been taught about John Glenn and his historic space flight that would not have been possible without these three women.
If you haven't seen this film before I highly recommend it and if you have seen it before then you know that you will enjoy watching it again. I am always inspired into the kitchen when watching films or reading books. I served this chicken up with mashed potatoes and chicken gravy but I also had maple syrup and hot sauce on the table. That is definitely the finishing touch for this meal.

Waffle Battered Fried Chicken
This recipe takes the iconic Chicken and Waffles and combines it into one delicious dish. Served up with hot sauce and maple syrup this is Southern Comfort Food at it's finest.
Prep time: 10 MinCook time: 7 MinTotal time: 17 Min
Ingredients
2 c. flour
2 T. sugar
2 1/2 t. baking powder
2 t. sweet paprika
1/2 t. baking soda
1/2 t. garlic powder
salt and pepper, to taste
1 1/4 c. buttermilk
2 eggs
2 t. vanilla
2 large chicken breasts, pounded and cut into cutlets
Hot Sauce and Maple Syrup for serving, if desired
Instructions
Whisk together the flour, sugar, baking powder, paprika, baking soda, garlic powder, salt and pepper in a large bowl.
Dredge the chicken cutlets in the flour and set aside on a plate.
Whisk together the buttermilk, eggs and vanilla until combined in a medium bowl.
Add 1/4 cup of the buttermilk mixture to the flour mixture and stir with a fork until shaggy.
Dredge the chicken cutlets in the buttermilk mixture and then in the shaggy flour mixture, pressing to make sure the flour mixture adheres.
Cook in a preheated 350* deep fryer until crispy golden brown and cooked to an internal temperature of 165*. Transfer to a wire rack placed over paper towel until all chicken is cooked.
Serve with Hot Sauce and Pure Maple Syrup, if desired.
