I received this jar of Whiskey Maple Syrup as a gift. We opened it and used it a few times when making cocktails and to drizzle onto my Waffle Battered Fried Chicken. While cleaning out the refrigerator I came across the remaining syrup and also a package of precooked bacon with a few slices left.
Inspiration struck and I decided to add these ingredients to a simple muffin recipe. I didn't add any sugar other than the syrup to the muffins so I decided to add a bit more sweetness with a brown sugar crumble on top.
This is just your Basic Muffin recipe but I deleted the granulated sugar and cut down on the amount of milk and oil to compensate for the liquid in the syrup. Then I added some crumble because muffins and crumble are a match made in heaven.

Bacon and Whiskey Maple Muffins
Light, tender savory muffins with just a touch of sweetness. Perfect with a cup of coffee and a piece of fruit in the morning for a complete breakfast.

Ingredients
- 2 c. flour
- 3 t. baking powder
- pinch of salt
- 1/2 c, canola oil
- 1/2 c. milk
- 1 egg
- 2/3 c. Whiskey Maple Syrup (or Pure Maple Syrup)
- 4 slices precooked bacon, diced
- 1/2 c. brown sugar
- 2 T. flour
- 1/2 t. cinnamon
- 1 T. cold butter, diced
Instructions
- Whisk toghether the flour, baking powder and salt in a large bowl. Form a well in the middle and set aside.
- Whisk together the oil, milk, egg and maple syrup. Pour into the well of dry ingredients and mix just until combined. Fold in the bacon.
- Divide the batter between a 12 cup muffin pan that has been treated with baking spray.
- Place the brown sugar, 2 Tablespoons flour, cinnamon and dice butter into a food processor and pulse 3 or 4 times until crumbly.
- Sprinkle over the batter in the muffin cups and bake in a preheated 350* oven for 18-20 minutes, until a skewer inserted removes cleanly.
