These simple and delicious muffins can be made using any nut butter. I happened to have some nutella in the cupboard. The Teen loves nutella and she made quick work of these muffins.

Banana Nutella Muffins
These muffins are not only delicious but you can feel good about giving them to your family. Packed full of protein from the nut butter and potassium from the bananas it is a great way to start the day.

Ingredients
- 2 c. flour
- 1/2 c. brown sugar
- 1 T. baking powder
- pinch of salt
- 1/2 c. Nutella
- 2 T. canola oil
- 2 eggs
- 3/4 c. milk
- 2 very ripe bananas
Instructions
- Combine the flour, sugar, baking powder and salt in a large bowl.
- In small bowl of stand mixer, fitted with the paddle attachment, beat together the nutella, oil, eggs, milk and bananas.
- Add to the dry ingredients and mix just until blended.
- Divide between 12 muffin cups that have been treated with baking spray or lined with paper liners.
- Bake in a preheated 375* oven for 20-25 minutes, until a skewer inserted into the center of a muffin removes cleanly.

ReplyDeleteI've been overrun with bananas recently- Sarah likes green bananas for health benefits so I have even more than just really ripe ones, leading to lots more really ripe ones, and the freezer is chock full of them, so having extra banana recipes is a blessing. I'll be revisiting this one.
ReplyDeleteI know that feeling Sue. Everytime Frank goes to the store he buys a bunch of bananas, one or two get eaten and the rest ripen and go into the freezer.
