Lemony Shrimp Pasta #LemonWeek

Wondering what to do with that 1/4 bottle of bubbly that is left in the refrigerator?  Wonder no more....
This easy and delicious pasta comes together quickly.  The lemon and wine give it a brightness while the mushrooms, shrimp and cheese  combine to make a complete one dish meal.

    Lemony Shrimp Pasta

    Wondering what to do with that 1/4 bottle of bubbly that is left in the refrigerator? Wonder no more....This easy and delicious pasta comes together quickly. The lemon and wine give it a brightness while the mushrooms, shrimp and cheese combine to make a complete one dish meal.
    Prep time: 10 MinCook time: 15 MinTotal time: 25 Min

    Ingredients

    • 1 lb. pasta of choice, cooked al dente per instructions on package
    • 1 T. olive oil
    • 8 oz. sliced mushrooms
    • 1 lb. large raw shrimp, peeled and deveined
    • 1 1/2 c. sparkling wine
    • zest and juice of 1 lemon
    • 1 shallot, finely diced
    • 4 cloves garlic, minced
    • 4 Roma tomatoes, seeded and diced
    • 1 c. heavy cream
    • salt and pepper, to taste
    • Parmesan cheese to sprinkle

    Instructions

    1. Heat oil in large skillet over medium high heat. Add the mushrooms, shallot and garlic and cook until liquid is released and mushrooms are lightly browned and tender.
    2. Add the shrimp and tomatoes, sprinkle with salt and pepper. Cook for a minute or two, remove shrimp and then add the wine and lemon juice. Bring to a boil and cook until liquid is reduced to about 1/2 cup, about 10 minutes. Stir in the cream and cook for a minute or two, until slightly thickened.
    3. Return the shrimp and mushrooms to the skillet and toss to coat and warm through.
    4. Place the pasta into a serving bowl and top with the shrimp and sauce, tossing to coat and warm the pasta. Sprinkle with parmesan cheese and lemon zest and serve.
