Pumpkin Gnocchi
This colorful gnocchi takes only minutes to make. They are delicious as a main vegetarian dish in a garlic butter sauce or as a side to whatever protein you are serving.

Ingredients
- 1 1/2 c. flour
- salt and pepper, to taste
- pinch of nutmeg
- 1 c. pumpkin puree
- 1 stick butter
- 2 cloves garlic, minced
- 1 t. dried savory
Instructions
- Combine the flour, salt, pepper, and nutmeg in a small bowl. Add the pumpkin puree and stir or work with clean hands until combined.
- Turn onto a lightly floured surface and knead about 15 times, form into a ball and let rest for 10 minutes.
- On the same lightly floured surface divide the dough into 4 equal portions. Roll each portion into a rope about 1/2" thick and then cut each rope into 6 pieces.
- Press and roll each piece on the tines of a floured fork. Set aside.
- Bring a large pot of salted water to a boil. Add the Gnocchi and cook for about 2 minutes, until they rise to the surface.
- While the gnocchi is boiling, melt the butter in a large skillet over medium-high heat. Stir in the garlic and savory, reduce heat and allow to cook until the gnocchi has cooked.
- Using a slotted spoon or spider remove the gnocchi from the boiling water and put directly into the skillet. Toss and stir until coated. Serve with a sprinkling of Parmesan Cheese, if desired.
