Coq au Vin Blanc and a Sancerre from Loire Valley and the Weekly Menu #Winophiles

A Sancerre by any other name......is a Sauvignon Blanc.  Sancerre is the French appellation in which this 100% Sauvignon Blanc is made.  Sancerre is located in the eastern part of the Loire Valley.  The Loire Valley is our destination this month with the French Winophiles.  Specifically, the White Wines of Loire Valley.

We had gotten home from our fabulous Italy tour on Saturday evening.  We had a marvelous 17 days traveling from the Amalfi Coast to Rome and then onto Umbria and Tuscany, ending in Florence.  The food and wine were amazing, but I was glad to be home and ready for the chance to enjoy a classic French dish and a crisp, white wine from the Loire Valley.

I was looking forward to getting back into the kitchen and was excited that Jeff of Food Wine Click had chosen the Loire Valley for this month's Winophile event.  The only problem was that I hadn't been home to receive my wine shipment, and I had no white wine from the Loire Valley on hand.

Then, our youngest daughter called and said she was on her way home from her boyfriend's house.  That meant she would be driving right by Total Wine.  I did a quick search and sent her a photo, asking her to stop and pick up this bottle for me on her way home.  When I went to give her the $35 it cost...she said it was her treat.  That is a win/win for sure!

Coq au Vin and Wine

Having not been home for 3 weeks, the cupboards were a little bare.  I had some chicken thighs in the freezer, and the neighboring town has a farmer's market on Sunday mornings, so I made a quick jaunt over and grabbed some potatoes, carrots, mushrooms, onions, and celery.  I spied some fresh green beans, so I grabbed those as well. 

Marissa came home with the wine and stayed to visit, but said she was meeting friends at the bar for dinner and to watch the Lions play.  When she left, I was suffering from jet lag and decided I needed a nap more than I needed to get my kitchen fix.

I awoke feeling much better.  Since I had slept through the time that my Coq au Vin should have been braising in the oven, I decided to pull out my trusty Instant Pot and give it a go.  Holy Cow!!!  I may never cook my Coq au Vin in the oven again!!  In less than an hour, I had this delicious stew ladled over mashed potatoes, with a side of blistered green beans.

I even had time to sip the Sancerre that I had opened for the stew, finding it crisp, acidic, and bright.  Frank and I finished the bottle with dinner.  That warm, savory stew toned down the acidity in the Sancerre for a very satisfying pairing.

I am finally over my jet lag, and things are getting back to normal around here.  There's not much on the schedule after this weekend, so I'm looking forward to getting back into my routine and heading to the gym each morning.

Instant Pot Coq au Vin Blanc

Instant Pot Coq au Vin Blanc

I made this classic French dish in an Instant Pot using white wine instead of red. It turned out perfectly.

Ingredients

  • 4 chicken thighs, skin removed
  • salt and pepper, to taste
  • 1 T. olive oil
  • 1/2 c. crumbled bacon
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 stalk celery, diced
  • 1 carrot, scraped and diced
  • 5-6 mushrooms, chopped
  • 1 sprig thyme
  • 1 stem rosemary
  • 1/2 c. dry white wine
  • 6 T. chicken stock
  • 1 T. flour
  • 1 T. butter, room temperature

Instructions

  1. Turn the Instant Pot to the saute setting and add the olive oil. Season the chicken on both sides with salt and pepper. When the pot signals it is hot, sear the chicken until browned, about 5 minutes per side. Remove to a plate and set aside.
  2. Add the onion, garlic, carrots, celery, and mushrooms to the pot and saute for a few minutes. Stir in the bacon, thyme, and rosemary. Cook for a minute longer and then add the wine. Cook until evaporated by half. Hit the cancel button on the pot.
  3. Add the chicken stock to the pot and then nestle the chicken pieces amongst the vegetables, returning any collected juices to the pot. Seal the pot and set it manually to high pressure for 12 minutes.
  4. When the pot signals the cooking time is over, use the quick-release method to bring down the pressure. Remove the chicken to a platter and keep warm.
  5. Set the saute setting on the Instant Pot again. Stir together the butter and flour. Stir into the liquid and vegetables. Cook and stir until thickened to a gravy. Taste and season with additional salt and pepper. Spoon the gravy over the chicken and serve.

  3. Win-win for sure! I will have to look for that at our Total Wine! And though I don't have an InstaPot, I'm sure I can adapt that to a Dutch Oven.
