Key Lime Pie Martini and the Weekly Menu #SummerCocktails

This sweet and tart cocktail is served in a glass rimmed with toasted coconut and crushed graham crackers providing all the flavors of your favorite pie in liquid form.

On Monday, we got together with Michelle of Our Crafty Mom, and shared some wonderful Summer Cocktails.  It was so much fun that we are back today with some more.......

Ingredients for Key Lime Martini

One sip of this cocktail will have you feeling like you're sitting on the beach in the Florida Keys.  It would make a wonderful after-dinner drink either with or in place of a piece of the iconic pie.

This is a fun cocktail, perfect for sipping by the pool.  You might want to make up a pitcher of them to keep in the refrigerator.

Speaking of cocktails by the pool.  Tomorrow we are having our Roatan after-dive gathering.  I think these Martinis and the Compari Spritz that I shared Monday will be popular choices.  Sunday the family is gathering to celebrate Father's Day.  We are praying for good weather this weekend.

We are going out to dinner with friends on Tuesday.  A restaurant near Detroit has started featuring a charcuterie tray that contains jam made by our son for his business, Tony's Sweet Eats.  Thursday night is our last Broadway Play of the season, The Wiz.  We will be going to dinner before the show.

Key Lime Pie Martini

Key Lime Pie Martini

This sweet and tart cocktail is served in a glass rimmed with toasted coconut and crushed graham crackers providing all the flavors of your favorite pie in liquid form.

Ingredients

  • 1 t. Key Lime Juice
  • 1/2 sheet graham cracker, crushed
  • 1/2 T. coconut flakes, toasted
  • 1 1/2 oz. coconut rum
  • 1 1/2 oz. vanilla vodka
  • 3/4 oz. key lime juice
  • 1/2 oz. pineapple juice
  • 2 T. cream of coconut

Instructions

  1. Combine the graham crackers and toasted coconut and place onto a small plate. Rub the rim of a martini glass with the teaspoon of Key Lime juice and then dip it into the graham cracker mixture. Set aside.
  2. Fill a cocktail shaker with ice. Add the rum, vodka, Key Lime juice, pineapple juice, and cream of coconut. Shake until well combined and chilled.
  3. Strain into the rimmed glass and serve.
