X is for Xylocarp

What is a xylocarp?  It is a fruit with a hard woody shell.  The best-known xylocarp is a coconut.  And the best way to enjoy coconut?  In a Pina Colada, of course.

X may have been the most challenging letter yet.  Let's take a look at what the others are serving up today.....

I was a little worried about what I would make that started with the letter X.  I did a Google search for foods or recipes that started with X and there were quite a few more than I had expected.  When I saw Xylocarp listed and learned that Coconut was a Xylocarp I suddenly had a ton of recipes I could make.

All of that research made me powerful thirsty.  I had all the ingredients I needed for this cocktail and had not yet shared it with you.  It's not very seasonal at the moment but I am having a Tropical-themed Friendsgiving on Friday so there is that.  Not to mention that they celebrate the Holidays on the Islands too.....So, Cheers!!

Frozen Pina Colada

Frozen Pina Colada

With only 3 ingredients, some ice, and a blender you can be whisked away to the Island of your dreams......
Prep time: 3 MinTotal time: 3 Min

Ingredients

  • 12 oz. pineapple juice
  • 6 oz. coconut cream
  • 3 oz. white rum
  • 3 c. ice
  • Maraschino cherry for garnish, if desired

Instructions

  1. Place all ingredients except the cherry into a heavy-duty blender and puree until smooth.
  2. Divide between 2 glasses and garnish with the cherry, if desired.

  1. Wendy, that is smart. Who would have thought of using scientific name for an ingredient. As for the frozen Pina Colada, don't mind having one right away, though it is cold outside.
