Jambalaya means "mish-mash" or mix-up. It is a combination of different meats and vegetables cooked with rice, much like a Pilau or Pilaf. It often contains seafood as in this Shrimp and Ham Jambalaya.

Chicken and Sausage Jambalaya
This recipe makes enough for a gang. It is a complete one-pot meal chock full of chicken, sausage, rice, and vegetables.

Ingredients
- 1 T. canola oil
- 2-3 lbs. boneless, skinless, chicken thighs, cut into bite-size pieces
- 1 lb. smoked sausage, sliced into rings
- 1 large, Vidalia onion, chopped
- 1 large green bell pepper, chopped
- 1 stalk celery, chopped
- 3 cloves garlic, minced
- 2 bay leaves
- 1 T. creole seasoning
- 1 t. thyme
- 1 t. oregano
- 2 c. converted (par-boiled) rice
- 3 c. chicken broth
- 2 (15 oz) cans diced tomatoes
Instructions
- Heat the oil in a dutch oven over medium-high heat. Add the chicken and sausage. Cook, stirring, until browned, about 10 minutes. Remove with a slotted spoon to a plate lined with paper towel and set aside.
- Add the onion, pepper, celery, garlic, bay leaves, Creole seasoning, thyme, and oregano to the dutch oven and cook, scraping up any browned bits stuck to the pan, until fragrant and vegetables are beginning to soften, about 5 minutes.
- Add the rice. Stir and cook a few minutes to cover the rice with the vegetables and spices, then add the chicken broth and the tomatoes with their juices.
- Return the chicken and sausage to the pot and bring to a boil. Reduce heat to low, cover and simmer for about 20 minutes, stirring occasionally until liquid is absorbed and rice is tender.

DeleteFeeds a gang -well that is what I am looking for. Like recipes which has all in one. I've come across quite a few jambalaya vegetarian style recipes. Need to give it a try.
