Amy and I have a lot in common. We are both Catholic. We are both Bloggers. We both love to read and we both love to cook. She married the eldest son of my dearest friend and she helped me set up my blog when I first began. We belong to a lot of the same blogging groups and as fate would have it she is also hosting our Lit Happens event this month.
Amy chose the novel It Ends With Us by Colleen Hoover. Lit Happens is an online bookclub. We have a page on facebook where we get together to discuss the book we are reading each month. There is no requirement to cook or blog about the book we are reading but many of us in the group are food bloggers so find ourselves inspired into the kitchen.
This was a tough novel. I loved it and I hated it. Sometimes on the same page. It deals with a lot of disturbing issues. Domestic Violence, Homelessness, Bullying, Relationships, Marital Rape.
It follows the life of Lily who graduates from college and heads to the city, leaving the suburbs and bad memories behind. Lily was raised in a household where her father repeatedly abused her mother, physically, emotionally and verbally. While Lily was not a recipient of this abuse she learned to hate her father and was angry at and ashamed of her mother.
We first meet Lily at her Father's funeral where she stands silent while giving the eulogy because she cannot think of one nice thing to say about him.
As a child Lily found solace by watching Ellen on television and, in diary fashion, would write Ellen letters telling her of the problems in her household and of the new friend she made, Atlas, who had found himself homeless during his senior year of high school.
Lily meets a man, Ryle, who is smart, charming, charismatic and funny. Lily falls in love with him and so did I. They get married and are very happy until the first time that Ryle loses his temper. He pushes Lily and she falls, striking her head.
Ryle is, of course, very sorry and contrite and Lily convinces herself that this situation is not the same as her mother's. After the third incident, Lily can no longer deny nor excuse the abuse and leaves Ryle. She is confused and hurt because she still loves Ryle and can't understand why she would still want to remain married to him. Then she discovers that she is going to have a baby and is even more confused.
She decides to ask her mom and texts her to set up a visit. Her mom invites her to come for dinner and Lily requests Lasagna.

Quick and Easy Meatless Lasagna
This quick and easy Meatless Lasagna is the perfect Lenten Meal
Prep time: 10 MinCook time: 1 HourTotal time: 1 H & 10 M
Ingredients
- 6 no bake lasagna noodles
- 1/2 c. grated parmesan cheese, divided
- 1 egg
- 1 c. ricotta cheese
- 1 t. dried Italian herb seasoning
- 1 qt. Marinara sauce
- 6 oz. fresh Mozzarella cheese, sliced
Instructions
- Cover the bottom of a 9" square baking pan with a little of the Marinara sauce.
- Combine half of the parmesan with the ricotta cheese, egg, and Italian herbs.
- Lay two of the noodles on top of the sauce in the pan, overlapping as needed.
- Place half of the ricotta mixture on top of the noodles. Pour one third of the remaining sauce over the noodles and layer one third of the Mozzarella slices on top.
- Repeat this with 2 more noodles, the remaining ricotta, another third of the sauce and Mozzarella.
- Cover with the remaining 2 noodles. Pour on the remaining sauce, add the remaining Mozzarella and sprinkle with the remaining Parmesan cheese.
- Cover tightly with aluminum foil and bake in a preheated 350* oven for 30 minutes. Uncover and bake an additional 20-30 minutes until hot and bubbly with the cheese melted and beginning to brown on top.
