Crockpot Meatloaf and the last Weekly Menu before Vacation

This meatloaf, made in a crockpot, is perfect for your next party.  It makes enough to feed a crowd, bakes in the slow cooker while you are busy preparing for company and....it is scrumptious.

And because it is made in the slow cooker it is perfect for summertime gatherings without heating up your house.

Finishing up the month with a Spinach Pie Lasagna

April is nearly a wrap.  So many good things to celebrate during the month of April starting with Easter and followed by birthdays.  And then such sadness to remember during this month on the anniversary of our loss of Kirsten.

woman

A plethora of emotions roiling around inside of me and such a sense of helplessness as I am faced with the fact that I cannot fix what is broken for those I love the most.  Perhaps it is God's way of telling me to let go and place my trust in Him.  A hard lesson for me to learn.

Peameal Ham and Egg Sandwich #SundayFunday

Peameal ham, also called Peameal Bacon, is a brined pork loin roast that was once coated in crushed yellow peas (but now coated in cornmeal) to preserve it.  It was developed in Canada in 1854 and is found mainly in Ontario, Canada.  It is not what we call Canadian Bacon here in the USA.

We were not given any monetary compensation and, as always, all writings and opinions on this blog are 100% my own.

Hemendex #EattheWorld

I was researching Slovakian recipes for this month's Eat the World Challenge and numerous recipes for Hemendex popped up.  I opened the first one and saw a photo of Ham and Eggs, it took me until the third recipe to finally hear in my head "Hemendex" as Ham and Eggs with a Slovakian accent.  I'm not really quick sometimes LOL.

Hemendex

I chose this recipe because it was such a fun name and because, with Easter around the corner, I thought it was a great way to used up leftover ham.

Pineapple Bread Pudding #SundayFunday

I served up this Pineapple Bread Pudding with breakfast one morning but it is also the perfect side dish to grace your Easter table next Sunday.  The recipe can be doubled or tripled to meet your needs.
