Selefina Spiced Chicken Tacos and the Weekly Menu #sponsored

 Adagio Teas proudly presents Selefina spices and I proudly share them with you.  I was given the opportunity to receive the new line of Selefina products at no cost for sampling/testing purposes.  I agreed to share my honest review of these products in return.  

Spices

Look at this assortment!!!  I didn't know what to make first.......
I looked through the spices and so many thoughts were racing through my head.  I found all those spice thoughts competing with my thoughts about our upcoming vacation.  Finally, after 2 years, we are going to get under the water again.  

Spices for Caribe Spice Mixture

I looked again at those spices and picked out those that I thought would work well for an Island flavor and went to work, mixing and blending until I got the flavor I wanted.  I was going to serve up some Chicken Tacos for Taco Tuesday.

I sliced up some chicken breast and tossed it with a couple of Tablespoons of the spice mixture before sauteeing it up in some olive oil.

Salsa

I placed some red onion, mini sweet peppers, and pineapple in the food processor and pulsed it a few times to make some salsa that I seasoned only with some Selefina Sea Salt Flakes.  I had some coleslaw in the refrigerator that I also used for my tacos.

These tacos were amazing.  The spice mixture was perfect, if I do say so myself, just the right amount of heat to keep my whole family happy.  This is a quick and easy Taco Tuesday meal and I can't wait to sprinkle some more of this spice mix I created with Selefina products onto some pork chops that I bought to grill.

Tonight we are having family dinner.  Jessica and Julien are bringing their Raclette Grill and I am opening up some French Rose Wines to enjoy with them.  Amy and Doug will be joining us as will John.  I'm looking forward to a relaxing, fun evening now that the Fish Fry season has come to a close.

The week will be spent getting ready for Easter Distribution at the Food Pantry on Wednesday.  Lot's of choir practice getting ready for the Triduum and lots of menu planning and prepping to celebrate the Lord's resurrection on Easter Sunday.  Stay tuned for that menu but in the meanwhile here is what we are eating this week.

Caribbean Spiced Chicken Tacos

Caribbean Spiced Chicken Tacos

White meat chicken, sliced and tossed in a Caribe Spice mixture, sauteed and placed into a corn tortilla, topped with coleslaw and salsa.

Ingredients

Caribe Spice Blend
  • 1 T. Italian Herb Seasoning
  • 1 t. flaked sea salt (I used Selefina)
  • 6-8 generous grinds of black pepper
  • 1 t. garlic powder
  • 1/2 t. cinnamon (I used Selefina)
  • 1/2 t. ground gingerroot ( I used Selefina)
  • pinch of cayenne pepper (I used Selefina)
  • 1/4 t. ground allspice berries (I used Selefina)
  • 1/2 t. smoked paprika
  • 1 T. brown sugar
  • 2 boneless,skinless chicken breasts, cut or sliced into bite size pieces
  • 1 T. olive oil
  • 6 corn tortillas, warmed
  • 1 c. prepared coleslaw (my recipe)
  • 1/2 c. pineapple salsa, homemade or your favorite brand

Instructions

  1. Place the Italian herbs, salt, pepper, garlic powder, cinnamon, ginger, cayenne, allspice, paprika and brown sugar in a sealable small bag and shake well to combine.
  2. Place the sliced chicken into a bowl. Add about Tablespoons of the spice mixture and toss to coat. Save the remaining spice mixture for another meal.
  3. Heat the olive oil in a large skillet over medium hight heat. Add the chicken and cook, stirring occasionally until caramelized brown and no pink remains.
  4. Divide the chicken between 6 warm corn tortillas. Top with the coleslaw and salsa and serve.
