Eating a rainbow is a delicious and beautiful way to get important nutrients and antioxidants into your diet.  It is true that we eat with the eyes first and when food looks appetizing it instantly gets your attention.

I try to serve my family rainbows as often as possible.  It is  great way to serve vegetables like this grilled ratatouille, or this salad of Mixed Greens with Golden Beets.  

You can also make a whole dinner into a rainbow as I did with this Grilled Steak with Mango Chimichurri served with Sweet Potato Fries, this Noodle Stir Fry with Chicken, Grilled Italian Sausages with Peppers and Onions or this Gingered Shrimp and Veggie Bowl.

Rainbows are not limited to dinner though.  How about a colorful breakfast of  Mixed Berry Crepes or Rainbow Sprinkles Pancakes?  

Let's not forget Rainbows for Dessert.  This Celebration of Spring Cake is perfect for this time of year.

Rainbow Roasted Vegetables in an Air Fryer

Colorful and flavorful, these vegetables roasted in an air fryer are ready to go on the table in only 20 minutes.
Prep time: 10 MinCook time: 20 MinTotal time: 30 Min

Ingredients

  • 4 baby red potatoes
  • 4 baby purple potatoes
  • 4 baby golden potatoes
  • 1 small head broccoli
  • 1 small head cauliflower
  • 8 mini sweet peppers, assorted colors
  • 2 T. olive oil
  • salt and pepper, to taste

Instructions

  1. Halve or quarter the potatoes to a uniform size and place in a bowl.
  2. Cut the broccoli and cauliflower into bite size florets and place in bowl with the potatoes.
  3. Seed and stem the peppers, cut in half and place in bowl with other vegetables.
  4. Add the olive oil, salt and pepper to the vegetables in the bowl and toss to coat.
  5. Place into the tray of your air fryer and roast at 400* for 20 minutes, until tender and lightly browned in spots.

  4. Wendy I will have to give purple potatoes a try as I've not used them before in my cooking. The colourful roasted vegetables look so good. Love the crunch and natural flavour of roasted vegetables.
