Swathi of Zesty South Indian Kitchen is hosting this month and asked us to share an Easter Bread. I have made and shared many different Easter Breads over the years. My husband's grandmother (Bacci) would always serve up a raisin bread. I tried to replicate that recipe here for Easter one year.
I have also tried my hand at Torta Salata Pasquale, and Hot Cross Buns. This year I decided to make a Chocolate Bunny Bread. It turned out looking more like a bear than a bunny but it was fun to make and very tasty.
Perhaps I should have made the ears longer LOL. The body has chocolate chips kneaded into the dough so while I was in the candy chip container I pulled out a couple of white chocolate chips for the eyes. When it was done baking they were brown but it worked.
I served it up with dessert after family dinner one weekend. The Angel Face was a little disappointed as she expected it to be more like cake or brownies.
Then when I told her we were having bread pudding with the leftovers the following night she was excited. Until I served it and she was expecting a creamy, chocolate pudding LOL.
So maybe if you make this for kids you might just want to call it bunny bread and omit the chocolate in the name so they aren't disappointed when they take their first bite.

Chocolate Bunny Bread
This adorable bread is so much fun to make with your little sous chefs and so much fun to serve up on your Easter Buffet.

Ingredients
- 2-2 1/2 c. flour
- 1pkg. instant yeast
- 1/3 c. sugar
- 3 T. baking cocoa
- pinch of salt
- 2/3 c. hot milk, 125-130*
- 2 T. melted butter
- 1 egg
- 1 t. vanilla
- 1/3 c. chocolate chips
Instructions
- Stir together the 1 cup of the flour, yeast, sugar, cocoa powder, and salt in large bowl of stand mixer, fitted with the paddle attachment.
- Add the milk and butter and mix until combined. It will be very loose.
- Whisk the egg and vanilla in a small bowl. Add a small amount of the batter to teh egg and whisk again. Add it to the bread batter and mix until thoroughly combined.
- Turn the speed to low and add flour, 1/4 c. at a time, until the dough forms into a soft ball that pulls away from the sides. You may not need the entire amount of resserved flour.
- Switch to the dough hook and knead on medium speed for 8-10 minutes.
- Remove from bowl and divide dough in half.
- Knead the chocolate chips into one half of the dough and form into a ball. Place onto a baking sheet that has been covered with parchment or a silicone mat. Press down with your palm and flatten into a 5" circle.
- Use 1/3 of the remaining dough to form the head, pinching it to the body to seal.
- Use a bit of the dough to form a nose and then divide the remaining dough into 6 equal portions.
- Use 2 of the portions to roll into balls for the arms. 2 of the portions to form into logs for the feet and 2 of the portions to form into ropes to make the ears.
- Place all appendages under the body or head and then press and pinch to seal. Add a couple of chocolate chips for eyes, if desired.
- Cover with a warm, damp towel and let rise until doubled in size, about an hour.
- Bake in a preheated 350* oven for 30-40 minutes, until baked through.
- Remove from oven to wire rack to cool.
