Beer Cheese Muffins #MuffinMonday

Beer Cheese Muffins

These quick and easy small batch muffins are a wonderful accompaniment to soup and the bonus of the small batch is there is half a beer to enjoy while they bake.

Ingredients

  • 6 t. canola oil
  • 1 1/4 c. flour
  • 1 (4 oz) can diced chiles
  • 1 T. sugar
  • 2 t. baking powder
  • pinch of salt
  • 3/4 c. shredded colby jack cheese
  • 6 oz. beer of choice

Instructions

  1. Place 1 t. oil into each cup of a 6 cup muffin tin. Place in a cold oven and preheat to 450*.
  2. Meanwhile, whisk together the flour, sugar, baking powderand salt. Make a well in the dry ingredients and add the beer. Stir until just combined. Add the chiles and cheese and mix until just incorporated.
  3. Divide the batter between the heated muffin cups and bake for 15 minutes, until a skewer inserted removes cleanly.

  1. I have one good savory muffin recipe (a low sugar corn muffin with jalapenos). I will need to add this to the list. May have to make these tonight with a salad! Thank you!
