These cookies filled with warm spices of cinnamon, ginger and cloves bring back fond memories of Christmases past. The Teen had never had them and was gobbling them up fresh from the oven while they were still soft. The following day when she grabbed a cookie for herself she was very surprised by the "snap" and crispiness of the cookie.

Molasses Cookies
These classic old fashioned spicy snap cookies are sure to make Santa very happy.

Ingredients
- 1 1/2 stick butter
- 1/4 c. molasses
- 1 1/4 c. sugar
- 1 egg
- 2 c. flour
- 2 t. baking soda
- 1 t. cinnamon
- 1/2 t. ginger
- 1/4 t. cloves
- pinch of salt
Instructions
- Place 1/4 cup of the sugar into a shallow bowl and set aside.
- Melt butter in large sauce pan over low heat. Remove from heat and whisk in the molasses and remaining sugar until blended. Add the egg and whisk until incorporated.
- Use a woodedn spoon to stir in the flour, baking soda, cinnamon, salt, ginger and cloves. The mixture will be like pate a choux, very moist and sticky.
- Transfer to a bowl, cover with plastic wrap and place in the freezer for 15-20 minutes.
- Using a small cookie scoop, shape batter into balls and roll in the reserved sugar. Place onto cookie sheets that have been lined with parchment or a silicone mat, spacing for 12 cookies on each sheet.
- Bake in a preheated 375* oven for 10 minutes until spread and darkened. Place any remaining dough back in the freezer while cookies bake.
- Remove from oven and cool on cookie sheet for a minute before transferring to a wire rack to cool completely.
- Repeat with remaining dough. Cookies will be soft the first day and then harden into snaps.
