Fresh Mint Chocolate Chunk Ice Cream #NationalIceCreamDay

Looking for a fun, delicious way to use up some of that fresh mint taking over your garden?  Look no more.....This creamy, refreshing ice cream is studded with chocolate chunks and oh so delicious.

My mint has taken over my garden.  In fact, I had to transplant some of it to another location to make room for my tomato plants this year.  In the fall, I am removing it from this location completely.  In the meantime, I am making lots and lots of mint recipes.

So I grabbed my little sous chef, went out and cut some of the mint and put her to work helping me make this scrumptious summer treat.

Fresh Mint Chocolate Chunk Ice Cream

Fresh Mint Chocolate Chunk Ice Cream

This creamy, refreshing ice cream is studded with chocolate chunks and oh so delicious.

Ingredients

  • 1 c. fresh mint leaves
  • 2/3 c. sugar
  • 2 c. heavy cream
  • 1 c. half and half
  • pinch of salt
  • 5 egg yolks
  • 4 oz. chocolate chips
  • 2 t. canola oil

Instructions

  1. Place the mint and sugar into a food processor and pulse until mint is minced.  Transfer to a saucepan.
  2. Add the heavy cream, light cream  and salt to the pan and cook over medium heat, stirring occasionally until bubbles form around the edge of the pan.  Remove from heat and let steep for 20 minutes.
  3. Whisk the egg yolks in a bowl, add half of the cream mixture to the yolks, whisking constantly and then return this mixture to the saucepan.
  4. Cook, stirring constantly over med heat until the custard is thick enough to coat the back of a spoon and leaves a trail when you draw your finger through it.
  5. Strain the custard through a fine mest sieve into a bowl.  Place this bowl into an ice bath, stirring occasionally until cool.  Cover with plastic wrap and refrigerate for at least 3 hrs or overnight.
  6. An hour before you are ready to churn the custard, melt the chocolate chips and oil in glass measuring cup in the microwave using 30 second increments, stirring well after each.  Let cool to room temperature.
  7. Churn your custard in an ice cream maker per manufacturers instructions.  When nearly frozen drizzle in the melted chocolate while still churning.  Continue to churn until ready to be placed into an airtight container to freeze overnight.
