This cake comes together quickly and takes less than half an hour to bake. Allowing for 25 minutes to cool you can have a wonderful dessert on the table in an hour.

Peanut Butter Cake
This is a peanut butter lovers dream come true. Peanut Butter Cake with Peanut Butter Frosting topped with Honey Roasted Peanuts.

Ingredients
Cake
- 3 T. creamy peanut butter
- 3 T. canola oil
- 1 egg
- 1/2 c. buttermilk
- 1/2 t. vanilla
- 1 1/4 c. flour
- 1 1/4 t. baking powder
- 1/4 t. baking soda
- pinch of salt
- 3/4 c. packed brown sugar
Frosting
- 1/4 c. butter, room temperature
- 1/4 c. creamy peanut butter
- 1 T. honey
- 1/4 t. salt
- 1/2 t. vanilla
- 3/4 c. powdered sugar
- Chopped honey roasted peanuts for garnish, if desired
Instructions
Cake
- Combine the peanut butter and oil in a small sauce pan over medium heat. Cook and stir until melted and smooth. Set aside.
- Whisk together the egg, buttermilk and vanilla.
- Combine the flour, baking powder, baking soda, salt and brown sugar in the large bowl of a stand mixer, fitted with the paddle attachment. Mix on low speed. Add the egg mixture and mix until blended. Gradually add the peanut butter mixture, beating until smooth.
- Spread batter into an 8" square baking pan that has been treated with baking spray. Bake in a preheated 350* oven for about 20 minutes, until a skewer inserted in the center removes cleanly. Remove from oven to wire rack to cool completely.
Frosting
- Place the butter, peanut butter, honey, salt and vanilla in the small bowl of a stand mixer fitted with the whisk attachment. Beat until blended. Reduce speed to low, gradually add the powdered sugar until incorporated. Increase the speed, beating until smooth.
- Spread onto cooled cake and sprinkle with chopped honey roasted peanuts, if desired.

DeleteAs much as I enjoy baking I love that these little cakes don't take long to bake. That frosting looks like the kind you're tempted to eat with a spoon. It looks really yummy!
