Carrot Salad with Feta and Pistachios #NationalCarrotDay #FoodnFlix
Crisp carrots, creamy feta cheese, crunchy pistachios and sweet dried pineapple combine to make a wonderful spring salad.
I was inspired to make this salad after watching Peter Rabbit with the Angel Face. Perfect because today is also National Carrot Day!!!
My friend, Sneha of Sneha's Recipe, invited the Festive Foodies to join her in celebrating National Carrot Day today. Carrots, when used in a salad like I have today, remind me of Spring. Carrots, roasted to a golden, sweet deliciousness remind me of Fall. They are the perfect year round, verasatile, vegetable and are always available in my vegetable drawer.

Our Food n Flix selection this month was chosen by Elizabeth of Literature and Limes. You can learn more and join in the fun by reading her invitation post. Elizabeth chose the 3D film, Peter Rabbit. Perfect choice for Easter month. Elizabeth states in the first paragraph of her invitation that she expects to see a lot of carrot recipes. How providential that National Carrot Day also occurs this month.
I had watched Peter Rabbit several years ago. The movie came out in 2018 and the Angel Face and I watched it together when it made it's way to the small screen. I plugged it in again on Easter and watched it from the kitchen while prepping for dinner while the Angel Face and her Mama enjoyed it in the adjoining living room.
We all know the story of Peter Rabbit and his sibling Flopsy, Mopsy and Cottontail. We know how he terrorized Farmer McGregor by stealing from his garden all the time. This version is adorable and has some twists. There is another sibling Benjamin who gets rooked into being Peter's sidekick in his shenanigans.
In this version Farmer McGregor, is not very nice and dies off early in the movie of a heart attack. There is also a very loving and friendly neighbor, BB, who tries to protect and care for the bunnies who are orphaned in this adaptation of the story.
Farmer McGregor's nephew inherits the house which has been taken over by Peter, his siblings and all the other forest creatures. The nephew, is not very partial to rabbits and considers them rodents. However, he is partial to BB so he tries to hide his disdain for the rabbits and wildlife that she loves.
It is a cute, adorable version and it does, of course, have a happy ending.

Carrot Salad with Pistachios and Feta
Crisp carrots, creamy feta cheese, crunchy pistachios and sweet dried pineapple combine to make a wonderful spring salad.

Ingredients
4 medium carrots, scraped and thinly sliced
3 T. lemon juice
2 T. olive oil
1 T. honey
salt and pepper to taste
1/3 c. crumbled feta cheese
1/4 c. roasted pistachios
3 T. dried pineapple, chopped
2 T. torn mint leaves
Instructions
Place the carrot slices in a bowl of ice water 15 minutes. This will keep them crisp. It is also supposed to turn them into curls but mine didn't curl for some reason. Gently pat them dry.
Whisk together the lemon juice, oil and honey. Season with salt and pepper.
Toss the carrots, cheese, nuts, pineapple and mint with the vinaigrette. Serve immediately.

Love this salad! looks very colorful and tempting. Also the addition of dried pineapple is great. Great that you combined both the events too. Carrot salad is good choice for the movie too!
