My husband is a CPL instructor. He has classes once or twice a month depending on the demand. It is an 8 hour class so I provide the students with breakfast and lunch. That breakfast always includes some homemade muffins, breads or pastries along with yogurt, fresh fruit, granola, assorted juices and coffee.
These muffins were a big hit with the students and I think I will be making them again and again.
The day after this class we left early in the morning for a week in Florida. We took the Teen and a friend to Universal. We stayed right on site at the Cabana Bay Beach Resort. We went to Universal Studios, Islands of Adventure and Volcano Bay. All of the property did a great job of social distancing, masking and keeping people safe. Each morning we had our temp taken and were given a colored wristband that let all the employees know we were fever free.
We got home late last night so I sat down and started working on my Weekly Menu that I am sharing with you now.

Maple Muffins
These muffins flavored with fresh Maple Syrup and cinnamon then topped with a pecan streusel make a perfect breakfast accompanied by yogurt and fresh fruit or just grabbed as you are running out the door.

Ingredients
- 2 c. flour
- 1/2 c. packed brown sugar
- 2 t. baking powder
- pinch of salt
- 3/4 c .milk
- 1 stick butter, melted
- 1/2 c. pure maple syrup
- 1/4 c. sour cream
- 1 egg
- 1/2 t. vanilla
- 3 T. flour
- 3 T. sugar
- 2 T. pecan pieces
- 1/2 t. cinnamon
- 2 T. cold butter, diced
Instructions
- In large bowl combine the flour, brown sugar, baking powder and salt. Make a well in the center and set asided.
- Whisk together the milk, butter, sour cream, syrup, egg and vanilla. Pour into the well in the dry ingredients. Mix just until combined.
- Divide between a 12 cup muffin pan that has been treated with baking spray or lined with paper cups.
- Place the flour, sugar, cinnamon, pecans and butter in the bowl of a food processor and pulse a couple of times until crumbly. Sprinkle over the muffin batter and bake in a preheated 400* oven for 15-20 minutes, until a skewer inserted removes cleanly.

DeleteThis is absolutely delicious. Love the flavor combo. Maple syrup, cinnamon, pecans - lovely flavors all packed in one muffin. I would finish the entire batch and would love to make this often in our home. Great that you are enjoying a vacation and the menu is awesome. Stay safe!
