I had a lot of fun watching this dark comedy about a dysfunctional family whose very rich father had died of an apparant suicide that is being anonymously investigated as a murder.
There is an all star cast for your enjoyment pleasure including Christopher Plummer, Jamie Lee Curtis and Chris Evans. There is not a ton of food inspiration but there is enough to get us by and if you really pay attention you might even come up with something the others don't.
I took my inspiration from a restaurant scene in which grandson, Ransom, takes his grandfather's nurse, Marta, out to dinner in an attempt to extract information and plant ideas. He ordered her beans and sausage ensuring that she would tell only the truth. You see, she has a condition that causes her to vomit whenever she tries to lie.

Instant Pot Butter Beans and Sausage
This quick and easy main course dish uses butter beans and smoked sausage. No need to soak or parboil the beans, the instant pot ensures fully cooked, soft and creamy beans.

Ingredients
- 2 links smoked sausage, cut into 1" thick rounds
- 1 red onion, chopped
- 1 bay leaf
- 3 carrots, scraped and sliced
- 3 stalks celery, sliced
- 1/2 t. Italian Herb Seasoning
- 4 cloves garlic, minced
- salt and pepper, to taste
- 6 c. chicken broth
- 1 lb. butter beans (baby lima beans)
Instructions
- Turn the Instant Pot to saute setting. When registering hot add the sausage and cook until browned.
- Add the onion, bay leaf, carrots and celery. Cook, stirring occasionally unilt onion is translucent. Stir in the Italian seasoning and garlic.
- Add the broth and bring to a boil, scraping up any browned bits stuck to the bottom of the pan. Season with peppper. Press the cancel button.
- Stir in the beans. Seal the lid, locking it in place and making sure the vent is closed. Press the bean setting and cook. When cooking time is done allow pressure to release naturally for 10 minutes before carefully using the quick release method.

DeleteI always cook beans in my stove top pressure cooker so the Instant Pot makes perfect sense. Your beans do look tender and creamy!
ReplyDeleteThanks Stacy. The only stove top pressure cooker I have is for canning and it is huge so I've never pressure cooked dinners until I got the Instant Pot.

DeleteMy Insta Pot doesn't have a bean setting.
ReplyDeleteThe default setting on my Instant Pot Chili/Bean button is 30 minutes on high pressure. Hope that helps.
