Green Goddess Dressing
This is a great time of year to enjoy this tangy, herb-packed dressing. The herb gardens are in full bloom right now, and the Farmer's Markets have tons of choices. This dressing can be customized with your favorite herbs and is great for using what you have on hand while it is still garden fresh.
Ingredients
- 1 c. Plain Greek Yogurt
- 1 c. fresh parsley leaves
- 1 c. assorted leafy herbs (I used mint, dill, chives, and tarragon)
- zest and juice of 1 lemon
- 1 T. olive oil
- 2 garlic cloves
- salt and pepper, to taste
Instructions
- Place the yogurt, parsley, and herbs in the bowl of a food processor. Add the lemon zest, juice, garlic cloves, and olive oil. Puree until smooth
- Taste and season with salt and pepper, as needed.
- Transfer to a covered container and refrigerate until ready to use.
