When Sneha of Sneha's Recipe invited us to make a sourdough creation for this month's Bread Bakers event, I pulled out my poor, neglected starter and fed it. The next morning, I fed it again without discarding any from the first feed. This resulted in a ton of beautiful, bubbly, fully hydrated sourdough starter the following morning.
I removed half a cup to make these waffles and put the remaining in the refrigerator to await the next sourdough project. This recipe will make 3 large waffles. You can double the recipe should you want to feed more.

Sourdough Oat Waffles
These light, fluffy waffles start with a 100% hydrated sourdough starter, mixed with oats and flour to provide extra structure, protein, and fiber. A great way to start the day.

Ingredients
- 1/2 c. fully hydrated sourdough starter
- 1 egg
- 1/4 c. butter, melted and cooled
- 1/4 c. milk
- 1/3 c. flour
- 1/3 c. rolled oats
- 1/2 T. baking powder
- 1/2 T. sugar
- pinch of salt
Instructions
- Whisk together the sourdough starter, egg, butter, and milk. Set aside.
- Combine the oats, flour, baking powder, sugar, and salt in a large bowl. Add the sourdough mixture and stir just until combined.
- Pour 1/3 of the batter into a heated waffle iron and cook per manufacturer's instructions.
