I served these Blini with Caviar for my Marina at a Russian Tea Party to celebrate the impending birth of our grandson, Milan. Blini with Caviar
This elegant appetizer is incredibly easy to make and impressive to serve. A great way to show the special person in your life just how much you appreciate them.

Ingredients
- 1/4 c. warm water (105-110*)
- 1 pkg. active dry yeast
- 1 1/2 T. sugar
- 1/2 c. flour
- 1/2 c. buckwheat flour
- pinch of salt
- 1 c. milk
- 4 T. butter, melted and cooled
- 2 eggs
- Sour Cream
- Caviar
Instructions
- Whisk the yeast and sugar into the water in a large bowl, and set aside for 5 minutes, until foamy.
- Add the flours, salt, milk, 3 Tablespoons of the butter, and eggs. Mix until incorporated. Cover with plastic wrap and let rise in a warm place for about 2 hours. The dough should have increased in volume and have bubbles breaking the surface.
- Heat a nonstick skillet over high heat, brush some of the remaining butter onto the pan, stir the batter, and add 1 Tablespoon of the batter to the pan. I was able to work in batches of 4 blini to the pan. Cook the blini, until golden brown and then flip to cook the other side, about 2 minutes total. Transfer to a plate and set aside.
- Arrange blini on serving platters, top with a dollop of sour cream and some caviar and serve immediately.
