C is for Chicken

It's definitely Chili weather here in Michigan, and we have been enjoying a lot of it.   This version is made with lean white-meat chicken breast and white beans, flavored with green chiles and cumin.  It is scrumptious.

I make a lot of soups and stews during the cold winter months, and Chili, of some sort, shows up at least a couple of times a month.  This is one of our favorites.  

I first shared this recipe on my blog in September of 2013.  The recipe program I used at the time is now defunct and no longer printable, so I am resharing it with you today using a more current program.

White Chicken Chili

White Chicken Chili

Lean, protein-rich, white-meat chicken breast and white beans, flavored with green chiles and cumin. It is scrumptious.

Prep time: 5 MinCook time: 25 MinTotal time: 30 Min

Ingredients

  • 1 lb. Chicken Breast, cut into bite size pieces
  • 2 cloves garlic, minced
  • 1 med. onion, chopped
  • 3 cans chicken broth or 6 cups homemade stock
  • 3 cans white navy beans or cannellini beans, drained and rinsed
  • 1 small can of green chiles
  • 1 t. cumin
  • 1 T. oregano
  • dash of cayenne pepper or hot sauce

Instructions

  1. Heat 1 T. oil (I use olive or coconut) in a soup pot. Add chicken, onions, and garlic, and season with salt and pepper.
  2. Cook until chicken is no longer pink. Add the beans, broth, chilis, cumin, oregano, and hot sauce.
  3. Simmer for 10-15 min. or, if you want to make this ahead of time, place it in a crockpot and cook on low until ready to serve. I like to top mine with shredded Mexican cheese blend and tortilla strips.

    1. This version is healthy, the crockpot version linked in the recipe box....that has cheese.

  2. A lovely recipe Wendy.. Whenever we buy the smallest quantity of chicken breast, we still get left over as hubby is the only one who eats meat. I can use the leftover chicken breast to make this healthy and filling chili. It is still pretty cold here which demands for piping hot meals.

One of my favorite light take outs from a local taco place is a single crunchy chicken taco, torn into bits in a bowl, and then pour over and toss a cup of their white chicken chili all together. It's like a little taco salad and varies based on how brothy their chili is that day but I always love it. I would totally make something like that with this easy chili! Add in some shredded lettuce, taco chips, tomatoes to the bowl... yum.
