Easter is over and April is upon us. Here in Michigan, the sun was out shining bright on the first day of April. Then Mother Nature said April Fools and sent in the rain for last night and today. I'm not complaining, we have had a very mild winter here in Michigan. Perhaps, too mild. I'm afraid our water levels are going to suffer due to lack of snow, ice, and rain
But there were already boats and anglers out and at em' enjoying the sunshine. There have been reports of King Salmon (Steelhead) being caught right now. I hope one of my fishing friends has some luck and shares that luck with me. I would love to share a Michigan Salmon recipe with you.
This salad would be perfect with fish, or anything else you might be cooking up. It's the perfect recipe easy, peasy, and delicious. Enjoy......

Carrot Pineapple Slaw
With only 5 ingredients and 5 minutes, you have a wonderful side salad for whatever you are serving up. Shredded carrots, pineapple tidbits, raisins, mayo, and cinnamon combine for a savory, slightly sweet addition to your dinner.

Ingredients
- 1/3 c. Mayonnaise or Miracle Whip
- 3 large carrots, shredded
- 1 can (8 oz) pineapple tidbits, drained, reserving 1 t. of juice
- handful of raisins
- pinch of cinnamon (I used cinnamon spice blend)
Instructions
- Whisk together the mayonnaise, cinnamon and reserved pineapple juice in a large bowl.
- Add the carrots, pineapple and raisins. Toss to coat.
- Refrigerate until ready to serve.
