I started out with a pumpkin recipe because after Halloween I still had some small pumpkins that I had used for decoration that were ready to be roasted and pureed. You can, of course, use canned pumpkin if you wish.
The recipe makes 10 mini loaves of delicious bread. We enjoyed one for dessert on the night I made them and the Teen took a loaf with her into her bedroom. The remaining loaves were wrapped up and placed in the freezer where they can easily be retrieved for giving as gifts or when unexpected guests arrive and you want to give them a treat.
I love making Christmas Sweets that can be frozen so that I can get an early start on the busy holiday season. When I was working I would try to get all my Christmas Baking done in on one day. My friend Michelle and her family would come and we would bake all day. I miss those days and times spent with my dear friend from childhood. It is coming up on the anniversary of our annual cookie-baking session, Michelle's birthday, and the anniversary of her leaving us to go to heaven. So this is a bitter-sweet Christmas Sweets Week for me.
I retired and Michelle moved to Texas. I started doing my Holiday Baking early and made a couple of sweet treats a week. I have continued this practice so that by the time the holidays arrive I have my freezer well stocked. If you have time to start your Christmas baking early you will find that it really cuts down on the stress.

Pumpkin Bread with Chocolate Chips
Tender, moist, pumpkin bread studded with chocolate chips. Perfect for breakfast or dessert. These little mini-breads make perfect gifts for hosts, teachers, and coworkers.

Ingredients
- 3 c. flour
- 2 t. pumpkin pie spice
- large pinch of salt
- 1 t. baking soda
- 4 eggs
- 2 c. sugar
- 2 c. pumpkin puree
- 1 1/2 c. canola oil
- 1 1/2 c. chocolate chips
Instructions
- Combine the flour, spice, salt, and baking soda in a large bowl. Set aside.
- In another bowl, beat together the pumpkin, eggs, sugar, and oil until well blended.
- Pour the pumpkin mixture into the flour mixture and mix just until combined. Stir in the chocolate chips.
- Divided the batter into loaf pans that have been treated with baking spray and bake in a preheated 350* oven until a skewer inserted removes cleanly. I used mini loaves and baked for 30 minutes. If using small loaf pans bake for 40-50 minutes and if using full size loaf pans bake for 60-70 minutes.
