There are a lot of different recipes for Cowboy Beans but they all have the same characteristics. All have beef, onions, beans and sauce. Some have bacon, bell pepper, chile pepper, and garlic. You can use any kind of beans you want but a variety of different beans works best. They can be cooked in the oven, in a slow cooker, on top of the stove or over a campfire.
You can make enough for a family of 4 or a party of 100 by just decreasing/increasing the quantities. If you are only making enough for your family, I recommend using a can of tri-bean blend along with the baked beans so you get the variety without the quantity.
I made this batch for a party of 16 as a side dish. I had leftovers that were delicious as a main course for lunch the following day. Like all baked bean recipes, it improves the longer the flavors have to meld together. I used the slow cooker this time, I have also baked them in the oven, or used an electric roaster when making them for a large gathering.

Cowboy Beans
These delicious and hearty beans are sure to be the talk at your next picnic potluck. Several different types of beans, hamburger. onion and jalapeno combined in a slightly sweet savory sauce. So dang good!!!

Ingredients
- 1 lb. lean ground beef
- 1 lb. bacon, diced
- 1 vidalia onion, diced
- 1 jalapeno, seeded and diced
- 1 (15 oz) can kidney beans, rinsed and drained
- 1 (15 oz) can white navy beans, rinsed and drained
- 1 (150z) can black beans, rinsed and drained
- 1 (28 oz) can baked beans
- 1/2 c. ketchup
- 1/4 c. Worcestershire sauce
- 2 t. yellow mustard
- 1/2 c. brown sugar
- 2-3 shakes hot sauce
Instructions
- In a large skillet over med high heat cook the bacon until the fat starts to render. Add the beef, onions and pepper. Cook, breaking up with a wooden spoon to crumble, until browned and onions are translucent.
- Drain, if needed and place into the crock of a slow cooker.
- Add the drained and rinsed beans and then the can of baked beans with the sauce.
- Stir in the ketchup, Worcestershire sauce, mustard, brown sugar and hot sauce.
- Cover and cook on high for 4 hours or low for 8 hours.
