Lemon Ice Cream #LemonWeek

    This ice cream was delicious on it's own.  Tart, sweet and refreshing it would also make a perfect intermezzo to cleanse the palate between courses.  I served it on top of a blueberry galette at a family dinner.  The Angel Face had hers sans galette. I will be sharing the galette recipe with you in early June.

    Lemon Ice Cream

    Lemon Ice Cream

    Creamy, Sweet and Tart this lemon ice cream is perfect as a refreshing dessert on it's own or as an addition to a fruit based tart, pie or galette.

    Ingredients

    • 1 c. heavy cream
    • 1 c. light cream, divided
    • 1 c. 2% milk, divided
    • zest and juice of 4 lg. lemons
    • 1 1/4 c. sugar
    • pinch of salt
    • 1/2 t. pure vanilla paste
    • 2 T. cornstarch
    • 1 (1/4 oz) pkg. gelatin dissolved in 1/4 c. boiling water

    Instructions

    1. Place the heavy cream, 1/2 cup of the light cream and 1/2 cup of the milk into a saucepan over medium heat. Bring to a simmer.
    2. Meanwhile, whisk the remaining light cream, milk, lemon zest, sugar, cornstarch, salt and vanilla together in a small bowl. Set aside.
    3. When heavy cream mixture reaches a simmer, add the light cream mixture and cook, stirring continuously until it comes to a boil and thickens enough to coat the back of a wooden spoon, about 15 minutes or so.
    4. Remove from heat and stir in the dissolved gelatin. Set aside to cool to room temperature.
    5. When custard is cooled, stir in the lemon juice. Cover and refrigerate overnight.
    6. Pour the mixture into the bowl of your ice cream maker and process according to manufacturer's instructions.
    7. Turn into a freezer safe container, cover and freeze for at least 4 hours before serving.

  1. Lemon is one of my favorite flavors, and the lemon ice cream sounds very delicious. Making ice cream isn't one of my activities, though -- we gave away the ice cream maker long ago!

  5. I've never seen ice cream with the corn starch and gelatin. It looks very interesting and certainly delicious.

    1. Yes, I was surprised as well but the recipe came from the manufacturer of my ice cream maker and it worked well.
