The Christmas Season ended in this household as we celebrated Little Christmas. You can read about that in this post. This weekend will be spent taking down all of our Christmas decorations and replacing them with Winter, Chinese New Year and Valentine's Day decor.
On Friday evening we will be having our son in laws parents over for one last dinner before they head back to France. We were only able to see them once this trip and it was on Christmas Day when things were pretty hectic. It will be nice to just be able to sit and chat with them for a bit.
You will find the recipe for the Shrimp Poke below my Weekly Menu. The weekly menu last week got switched up a bit so you might see repeats in this weeks meals. What's on your menu this week?
Shrimp Poke
Ingredients
- 2 scallions, white and light green sections, thinly sliced
- 2 T. Soy sauce
- 1 T. mirin
- 1 T. sesame oil
- 1 t. ginger paste
- pinch of crushed red pepper
- 12 ounces peeled deveined shrimp, tails removed
- 1 (8oz) pouch quinoa and brown rice mixture
- 1 T. seasoned rice vinegar
- 1 c. grape tomatoes, halved
- 1 avocado, pit removed, peeled and sliced
Instructions
- Whisk together the scallions, soy sauce, mirin, sesame oil , ginger and crushed red pepper. Remove 1 Tablespoon and set aside. Toss the shrimp in the remaining marinade to coat.
- Heat a non stick skillet over med high heat. Remove the shrimp from the marinade and cook, tossing, until pink. Remove from heat and set aside.
- Cook the quinoa/rice mixture according to package directions. Pour into a bowl and toss with the rice vinegar.
- Divide between two shallow bowls and top each with half of the shrimp, tomatoes and avocado slices. Drizzle each with 1/2 Tablespoon of the marinade and serve.
