Smoked Salmon Sushi Bowl
Ingredients
- 1 c. cooked brown rice
- 1 T. seasoned rice vinegar
- 1/2 t. rice wine
- 1/2 T. soy sauce
- sprinkle of sesame seeds
- 1 T. Miracle Whip
- 1/2 t. siracha
- juice of 1/4 lime + lime slices for garnish
- 4 oz. cold smoked salmon
- 3-4 slices avocado
- 10 frozen edamame pods, blanched
Instructions
- Combine the rice vinegar, rice wine and soy sauce. Add the brown rice and toss to combine. Place into a single serving bowl and sprinkle with sesame seeds.
- Whisk together the Miracle Whip, siracha and lime juice. Set aside.
- Top the rice with the smoked salmon, siracha mayo, avocado and edamame. Garnish with lime slices.

This is the perfect meal when looking for something with a lot of flavor, but more on the healthy side. I loved working with all the different ingredients I don't typically use - edamame, siracha, salmon, and so on!

DeleteI love this idea! Totally doing this for dinner for my family this next week and making the brown rice in my instant pot. Fortunately my entire family loves sushi so I know this is right up our alley!
