I just had plain, leftover 5 minute oats that we had enjoyed for breakfast adding our own favorite toppings. I always add dried cranberries and brown sugar so I included these ingredients in my muffins. You can use any type of leftover oatmeal you have on hand, steel cut and quick work just as well as my 5 minute oats.
This recipe is very versatile. Prefer honey as your sweetener? Go for it. I made 6 jumbo muffins. You can make any size muffins you want.
As always, this recipe is just a guideline and can be made to your liking using whatever ingredients you have on hand. I love having leftover recipes available because nothing, to me, is worse than wasting perfectly good food.
However you enjoy your oatmeal try to make sure that you fit it into your diet. It is a nutritional powerhouse providing you with fiber, protien and tons of vitamins and minerals. Stay well. Stay Safe. Stay Healthy.
This is such a great idea, I'm always looking for healthy portable breakfasts for my guys!
