I received a wonderful summer tea package from Adagio Teas. One of the items they sent was a selection of different flavored matcha tea. My friend, Cam of Culinary Adventures with Camilla, bakes with Matcha all the time. I had never but was excited when I got this box of flavored matcha teas, knowing that they make great additions to baked goods.
I knew that I wanted to use match for the Monday Muffins. I decided on the Jasmine Matcha and adapted a recipe that I found on Beautiful Eats and Things.
These muffins are a great way to start your day. Whether you are going to the cemetary, watching a special on television or having a social distancing gathering at your home, these muffins will start your day off right and keep you going until your mext meal.

Jasmine Matcha Muffins
Light fluffy and lemony, these muffins made with Jasmine Match Tea are not only delicious but filled with healthy antioxidants.
Prep time: 10 MCook time: 15 MTotal time: 25 M
Ingredients:
- 1 3/4 c. flour
- 1 T. baking powder
- 2 packets Jasmine Matcha Tea from Adagio Teas or 1 1/4 t. matcha tea powder of choice
- pinch of salt
- 3/4 c. sugar
- 3/4 c. milk
- 2 t. vanilla
- 1/4 c. canola oil
- 1 egg
- 1/2 t. of zest and all the juice of 1 lemon
Instructions:
- In large bowl combine flour, baking powder, jasmine matcha powder, salt and sugar.
- Whisk together the milk, vanillla, egg, lemon juice and zest. Pour into the dry ingredients and mix just until combined.
- Divide between 12 muffin cups that have been treated with baking spray.
- Bake in a preheated 400* oven for 15 minutes or until a skewer inserted removes cleanly.
- Let cool in pan for a few minutes and then turn onto wire rack to cool completely.
