Lobster, Mango and Avocado Salad; How to celebrate in Don Tillman Style

We celebrated our 28th Anniversary on Saturday.  This was a very different celebration than which we normally have.  Sometimes we go out for dinner, but that was not an option this year.  That's okay, we often have dinner at home but this is the first Anniversary dinner we have had at home since we adopted the Teen.

We still broke out the china, lit candles, opened a nice wine and created a wonderful dinner.  We still toasted to our amazing life together and wished for many more years to come.  And then, after dinner, we broke out the Yahtzee game and the Teen kicked our butts........


But that's okay, one thing I've learned in this 28 years is that relationships evolve and change over time.  I had reviewed a novel recently called The Rosie Project.  The protagonist in the story, Don Tillman who is a high functioning Asperger's patient, is also learning that relationships are not static but continually change.

Don starts "scientifically" looking for a wife by creating a questionnaire that is guaranteed to find him his "perfect" life's partner.  I didn't have a questionnaire but I was still lucky enough to find my perfect life's partner.

As luck would have it, so did Don, however his questionnaire had nothing to do with it.  Rosie walked into his life and fate took over.  On their very first date, Don served her the same dinner that he served every Tuesday of his adult life, Lobster Mango and Avocado Salad.   He wasn't going to serve wine, because Tuesday's was not a wine day but Rosie soon put the kibosh on that and a bottle was opened.

And while we didn't pair this wine with our Lobster Salad, we did serve it with the entree of Pan Seared Filet Mignon with Zip Sauce served with Garlic Mashed Potatoes and Oven Roasted Asparagus.  It was delicious.  As was the first course, this Lobster salad inspired by The Rosie Project.

Lobster, Mango and Avocado Salad

Lobster, Mango and Avocado Salad

Delectable layers of avocado, mango and tender lobster meat served in martini glasses makes the perfect first course for any celebratory dinner.

Ingredients:

  • 2 (4-6 oz) Lobster tails, steamed, shelled and sliced 
  • 1 c. frozen mango chunks or 1 ripe mango, cut into 1/2" dice
  • 2 scallions, white and light green parts, thinly sliced
  • 1 avocado, peeled, pitted and cut into 1/2" dice
  • juice of 1 lime, divided
  • salt and pepper, to taste
  • Fresh basil leaves for garnish

Instructions:

  1. Combine the avocado, juice of 1/2 lime, salt and pepper.  Divide between 4 martini glasses.
  2. Combine the mango and scallions.  Divide and layer over the avocado in the 4 glasses.
  3. Top with the sliced  lobster meat.  Sprinkle with remaining lime juice and garnish with basil leaves.  Cover with plastic wrap and refrigerate until ready to serve.
