250 years of Independence and the Weekly Menu

 

250 Anniversary

I remember 1976, when we were celebrating our country's 200th anniversary.  I was so excited and proud to be an American.  I was a young adult and had just had my second child, my son, Chuck.  His room was decorated in Red, White, and Blue.  Our country was recovering from the Watergate scandal, and we had great hopes for the future.

Independence--The Day, A Book, My Thoughts

It seems strange to me that we are all celebrating Independence when we took such a backward step in our country.  But, we celebrated our Independence since this country's break from England's rule regardless of the rights of individuals throughout the years.

So, let us celebrate as we always have and appreciate the fact that we do live in a Free and Democratic Country where we can all go out and have our voices heard in the upcoming elections.  THAT is our strength, power and Independence.

Red White and Blue Muffins #MuffinMonday

May you all enjoy this Memorial Holiday and may we all take a moment today to think about the sacrifices made to make the USA the Home of the Brave and the Land of the Free.  May we never lose sight of the cost of being the greatest country in the world.

We got home in the wee hours yesterday morning.  It was a wonderful trip and I will be sharing our last day when we toured the Island later this week.  But today?  Today is Muffin Monday as well as Memorial Day so I am sharing with you some Red White and Blue Muffins that are quick, easy to make and will provide a festive treat for you today.


Muffin Monday occurs the last Monday of each month when Stacy of Food Lust People Love invites bloggers to post a muffin recipe of their choice.  There is no theme but your muffins must be made in the "muffin" fashion.  That is mixing together the dry ingredients.  Whisking together the wet ingredients and then combining the two.


I adapted this recipe from one found at Taste of Home.  I liked it not only because it was perfect for Memorial Day but also because it only makes 6 Muffins which is perfect for the 2 of us.


While these are not the most beautiful muffins I have ever made, they were certainly right up at the top in the taste department.

Red White and Blue Muffins

Celebrate Memorial Day, Fourth of July or just your love of the USA with these delicious and tender muffins studded with strawberries, blueberries and white chocolate chips.
prep time: 10 minscook time: 20 minstotal time: 30 mins

ingredients:

3/4 c. flour
1/3 c. sugar
1/4 t. baking soda
1/8 t. nutmeg
1 egg
1/4 c. olive oil
2 T. milk
1/3 c. chopped strawberries
1/4 c. blueberries
3 T. white chocolate chips

instructions

Combine the flour, sugar, baking soda and nutmeg in a bowl.  Set aside.  Whisk together the egg, oil and milk.   Make a well in the dry ingredients.  Pour the wet ingredients into the well and stir just until combined.  Stir in the strawberries, blueberries and white chocolate chips.  

Divide the batter between 6 muffin tins that have been treated with baking spray or lined with paper cups.  Bake in a preheated 375* oven for 18-22 minutes, until a skewer inserted removes cleanly.  

Let cool for 5 minutes before removing from pan.

Tomato, Cucumber and Blue Cheese Salad #SundaySupper

Welcome to Sunday Supper.  I haven't had an opportunity to participate with this great group for a few  weeks and I am happy to be back today.

This week's party we are celebrating Independence Day with recipes that are Red, White and Blue. You will find tons of great ideas for your celebration on Tuesday, the 4th of July.

I have shared several great patriotic recipes in the past including:

Today I decided to share something savory as I hadn't yet done that.  This isn't so much a recipe as a composed salad, using tomatoes for the red, peeled cucumbers for the white and blue cheese for the blue.  


Season with some salt and pepper, drizzle with some good olive oil (I used basil infused) and some aged balsamic vinegar.  You have a quick, easy and delicious side dish for whatever you are serving up for your Independence Day get together.  


Check out all the other great Red White and Blue creations following these simple instructions for my salad.

Tomato, Cucumber and Blue Cheese Salad

2 Tomatoes, thinly sliced
1 English Cucumber, peeled and thinly sliced
2 oz. Blue Cheese crumbles
salt and pepper, to taste
extra virgin olive oil, to taste
aged balsamic vinegar, to taste

Arrange the tomatoes, cucumber and cheese on a platter in the order listed from left to right.  Season with salt and pepper and drizzle with the oil and vinegar.  Serve at room temperature. Print Recipe
