Garlic Basil Wax Beans #SundayFunday

What's better than having a garden?  Having a generous neighbor with a garden.  I was gifted a gorgeous batch of yellow wax beans the other day.  I cooked them simply so as to relish their deliciousness.

Grandma and Granddaughter

I was very excited when my neighbor dropped off this batch of beans.  My Little Miss M and her family were joining me for dinner.  She was happy to help me snap off the ends and break them into uniform pieces.

I simply blanched them before sautéing them in garlic butter and tossing them with basil before serving.  They were wonderful, and Little Miss M proudly announced at dinner that she had helped make them.

Garlic Basil Wax Beans

Garlic Basil Wax Beans

Fresh from the garden, beans are blanched before being quickly stir-fried in garlic oil and tossed with fresh basil before serving.


Prep time: 20 MinCook time: 5 MinTotal time: 25 Min

Ingredients

  • 1 lb. wax beans, trimmed
  • 1 T. olive oil
  • 4-5 cloves garlic, minced
  • salt and pepper, to taste
  • handful of fresh basil leaves, chopped

Instructions

  1. Place the beans into a pot and cover with water. Place over high heat and bring to a boil. Remove from heat, drain immediately, and place beans in an ice bath to stop the cooking process. Set aside.
  2. Heat the oil in a large skillet or wok. Add the beans and garlic. Season with salt and pepper and cook, stirring until starting to blister in spots.
  3. Off heat, stir in the basil and serve.

  3. Oh, I LOVE wax beans! I liked them better than green beans, just such a tender texture. We always had them in the garden when I was a kid and I love to put them in 5 bean salads, but they sure are hard to find canned nowadays!

    1. Yes, I don't know why they are not as popular as their green cousins. I prefer them as well.

  6. Totally agree! We are past our gardening days. It's way less money for me to just head down to the farmer's market every week than to buy plants. I haven't had wax beans for years...I'll have to keep checking the market for them!
