I served it as a main course, with a side of garlic bread. OH MY YUM!! This recipe made enough for 3 of us to enjoy for dinner and 2 of us to enjoy for lunch the following day.

Pizza Beans
This is a wonderful Meatless Monday meal with tons of protein from the beans and cheese, with all the pizza flavors you love.
Ingredients
- 1 Vidalia onion, diced
- 3 cloves garlic, minced
- 2 (15 oz) cans Butter Beans, drained but not rinsed
- 1 T. olive oil
- salt and pepper, to taste
- 1/2 t. dried oregano
- 3-4 handfuls of baby spinach
- 2 1/2 c. Marinara Sauce
- 2 c. shredded Mozzarella Cheese
Instructions
- Heat the olive oil in a cast-iron or oven-safe skillet over medium heat. Add the onions, season with salt and pepper, and cook until fragrant and translucent.
- Stir in the garlic and oregano, cook for about 30 seconds, then add the beans.
- Add the spinach, in batches by handfuls, stirring until wilted. Stir in the marinara sauce and cook for about 5 minutes, until heated through and bubbling.
- Remove from heat, sprinkle the cheese over the beans, and place under a broiler until the cheese is melted and browned in spots, about another 5 minutes.
