This delicious pie combines orange and cream and serves it up in a flaky pie crust. It is the same flavor profile of push-ups or orange creamsicles that we enjoy as ice cream during the summer months.
This recipe contains both the zest and the juice from these wonderful blood oranges that were provided by sponsor, Melissa's Produce.

Blood Orange Creamsicle Pie
Ingredients
- Juice of 2 lbs. blood oranges, about 1 cup
- 2T. sugar
- zest of 5 blood oranges
- 1 stick butter
- 4 eggs + 3 egg yolks
- 1/2 t. pure orange extract
- 1 c. heavy (whipping) cream
- 1 1/2 t. vanilla paste
- 2 T. powdered sugar
- 1 baked 9" deep dish pie shell
Instructions
- Whisk together the eggs and yolks. Set aside.
- Place the butter, sugar, and juice into a medium saucepan over medium-low heat, just until butter is melted and sugar is dissolved. Slowly drizzle this mixture into the eggs, whisking continuously. Return the egg mixture to the saucepan and cook over medium heat until thickened enough to coat the back of a wooden spoon.
- Remove from heat. Stir in the orange zest and the extract and pour into a bowl. Cover and set aside to cool completely.
- Place the cream, vanilla extract, and powdered sugar into the bowl of a stand mixer, fitted with the whisk attachment. Whip until thickened and soft peaks form.
- Whisk 1 cup of the whipped cream into the orange curd. Fold in the remaining whipped cream just until incorporated, leaving swirls of color.
- Refrigerate for 4-6 hrs. before serving or freeze and serve partially frozen.
