Blood Orange Creamsicle Pie #Spring SweetsWeek

This post is sponsored in conjunction with #SpringSweetsWeek. I received product samples from sponsor companies to help in the creation of the week's recipes. All opinions are mine alone.

Do you have fond memories of Push Ups?  You know, those frozen orange creamsicle treats you used to get from the ice cream man.  They are wrapped up in cardboard and you push them up past the cardboard wrapper with a stick.  They used to be one of my favorites and this fun, delicious cake brought back many fond food memories.

Blood Orange Creamsicle Pie

This delicious pie combines orange and cream and serves it up in a flaky pie crust.  It is the same flavor profile of push-ups or orange creamsicles that we enjoy as ice cream during the summer months.

Blood Oranges

This recipe contains both the zest and the juice from these wonderful blood oranges that were provided by sponsor, Melissa's Produce.

Blood Orange Juice

This juice is so flavorful.  Look at that deep, beautiful color!!  That color fades of course when mixed with the cream but instead of getting a bright orange filling for your pie, the blood oranges tame that color down to more of a golden orange.

If you want a brighter, lighter color substitute any juicy orange of choice for the blood oranges.  You need about 1 cup of juice that you will use to make the curd.
vanilla paste

I added even more flavor to this pie by incorporating this Vanilla Bean Paste provided by sponsor, Taylor & Colledge into the whipped cream.

Creamsicle Pie Pin

I like to freeze this pie, pulling it out of the freezer as we begin dinner so that when it is time for dessert it is still ice cold and partially frozen.  You do not have to freeze it but you do want to let it chill for several hours in the refrigerator before serving.

    Blood Orange Creamsicle Pie

This delicious pie combines orange and cream and serves it up in a flaky pie crust. It is the same flavor profile of push-ups or orange creamsicles that we enjoy as ice cream during the summer months.
Prep time: 1 HourTotal time: 1 Hour

    Ingredients

    • Juice of 2 lbs. blood oranges, about 1 cup
    • 2T. sugar
    • zest of 5 blood oranges
    • 1 stick butter
    • 4 eggs + 3 egg yolks
    • 1/2 t. pure orange extract
    • 1 c. heavy (whipping) cream
    • 1 1/2 t. vanilla paste
    • 2 T. powdered sugar
    • 1 baked 9" deep dish pie shell

    Instructions

    1. Whisk together the eggs and yolks. Set aside.
    2. Place the butter, sugar, and juice into a medium saucepan over medium-low heat, just until butter is melted and sugar is dissolved. Slowly drizzle this mixture into the eggs, whisking continuously. Return the egg mixture to the saucepan and cook over medium heat until thickened enough to coat the back of a wooden spoon.
    3. Remove from heat. Stir in the orange zest and the extract and pour into a bowl. Cover and set aside to cool completely.
    4. Place the cream, vanilla extract, and powdered sugar into the bowl of a stand mixer, fitted with the whisk attachment. Whip until thickened and soft peaks form.
    5. Whisk 1 cup of the whipped cream into the orange curd. Fold in the remaining whipped cream just until incorporated, leaving swirls of color.
    6. Refrigerate for 4-6 hrs. before serving or freeze and serve partially frozen.
