Cranberry Chocolate Chip Cookies
Ingredients
- 1 1/4 c. flour
- 1/2 t. baking soda
- pinch of salt
- 6 T. butter, room temperature
- 6 T. dark brown sugar, packed
- 2 T. sugar
- 1 1/2 T. light corn syrup
- 1 egg
- 1 t. vanilla
- 1/2 c. dried cranberries
- 4 oz. chocolate chips, I used semi sweet
Instructions
- Combine flour, baking soda and salt. Set aside.
- In large bowl of stand mixer, fitted with the paddle attachment, beat the butter, brown sugar, sugar and corn syrup on medium speed until creamy. Beat in the eggs and vanilla until combined.
- Reduce speed to low and gradually add the flour mixture until blended. Stir in the cranberries and chocolate chips.
- Using a small cookie scoop, place the dough onto 2 baking sheets that have been covered with parchment or a silicone mat.
- Bake in a preheated 375* oven for 10-12 minutes, rotating the pans halfway through cooking time.
- Transfer cookies to wire rack to cool.

Delete2 dozen cookies...the perfect amount of cookies!!! 3 dozen would be too many and 1 dozen just wouldn't be worth baking!!! Perfection!!!
