Bone Canyon Sushi Roll~~A Book Review

Lump crab meat mixed with cream cheese and mayo, layered with crunchy cucumber and creamy avocado wrapped up in nori and brown rice.  Perfect as an addition to a sushi appetizer tray for those who don't care for raw fish or as a main course meal for one.

In this second novel Eve, a young, dyanamic, 20 something female who took advantage of an opportunity provided by viral footage of an arrest to make detective rather than going through the hoops as is protocol, finds herself investigating bones found after a wildfire took out much of a State Park in California.

Eve and her partner, Duncan Pavone, learn that the bones belong to 2 victims of unrelated homicides.  Now all they have to do is solve these cold cases while battling the corruption within the department that has them constantly watching their backs.

Eve ends up injured and in the hospital.  Her mom, who is a whole other story in herself, shows up and brings Eve sushi.  She says it supposed to be crab but it is probably krab.

I happened to have some crab leftover from when I made these delicious Cranberry Topped Crab Puffs that I shared with you last week.  I pulled some out of the freezer and started experimenting.  They turned out delicious and I enjoyed them for lunch.  I now know what I'm going to do with the remaining crab in my freezer because these will be perfect on an appetizer tray during the holidays.

Creamy Crab Roll

Creamy Crab Roll

Lump crab meat mixed with cream cheese and mayo, layered with crunchy cucumber and creamy avocado wrapped up in nori and brown rice. Perfect as an addition to a sushi appetizer tray for those who don't care for raw fish or as a main course meal for one.

Ingredients

  • 1/2 c. shredded lump crab meat
  • 1 T. cream cheese, room temperature
  • 1 T. Miracle Whip or Mayo
  • 1/2 of a mini cucumber, slice lengthwise and then sliced into 3 lengthwise slices
  • 3 slices avocado
  • Siracha to taste
  • 1 nori wrap
  • 1 c. cooked brown rice
  • 1 t. rice vinegar
  • pinch of sugar

Instructions

  1. Cook the brown rice per package directions. When tender sprinkle with the vinegar and sugar, stir and set aside to cool.
  2. Mix together the crab, cream cheese and Miracle Whip.
  3. When rice is cooled, spread onto a bamboo sushi mat, cover with plastic wrap and use a rolling pin to spread so that it is thin and even.
  4. Remove the plastic wrap and lay the nori on top of the rice, ridged side down.
  5. Spread the crab mixture on the nori then add the cucumber and avocado slices.
  6. Drizzle with desired amount of siracha.
  7. Fold the sushi mat in half and then roll the ingredients into cylinder. Cut into 8 pieces using a serrated knife dipped in water between slices.
  8. Serve with desired condiments.
