Author, Zoē François, says that this may be her favorite cake in the book. I thought it would be mine as well for several reasons. I LOVE plums and I dislike frosting and this cake is topped with cinnamon sugar.
I had been to the Farmer's Market and had bought some fresh plums that I let sit on the counter for a day before using them for this cake. This cake was good but definitely not my favorite of those I have made thus far from this book. I think that distiction is going to the Jaconde that I shared in January.
This Plum Cake would have benefited from a scoop of ice cream or a dollop of whipped cream, neither of which I had on hand when I served it up. I would reccomend that if you make this cake, and you should, plan on serving it warmed with some vanilla ice cream on top.

Plum Cake
Fresh plums enfolded in tender cake, topped with cinnamon sugar.
Prep time: 10 MinCook time: 1 H & 5 MTotal time: 1 H & 15 M
Ingredients
- 10 T. butter, room temperature
- 1 c. sugar
- 2 eggs
- 1/2 c. milk
- 1 t. vanilla
- 1 c. flour
- 1/2 c. almond flour
- 1/4 c. white whole wheat flour
- 1 t. baking powder
- pinch of salt
- 4 plums, quartered
- cinnamon sugar for sprinkling
- 2 T. butter, chilled, cut into small dice
Instructions
- Place the butter, sugar, eggs, milk, and vanilla into the bowl of a food processor, and mix until smooth. Add the flours, baking powder and salt. Pulse until combined and smooth.
- Pour into a 9" springform pan that has been lined with parchment and treated with baking spray.
- Add the plums, making a large circle on the outside edge, filled with a smaller circle inside.
- Bake in a preheated 375* oven for 45 minutes.
- Remove from oven and sprinkle with the cinnamon sugar. Scatter butter pieces over all and return to the oven for about another 20 minutes, until a skewer inserted removes cleanly.
- Remove the sides of the pan and place cake onto a wire rack to cool

I love your candles! It's funny how this is Zoe's favorite cake in the book! At least it's super easy. I wish I'd had whipped cream for sure.
