Sweet Potato Pie, A Book Review and The Weekly Menu

This is the first time I have ever made or eaten a Sweet Potato Pie....Well, as far as I know.....It tastes just like a pumpkin pie, my very favorite pie, so perhaps I have had it unknowingly.  I wish I had known this a couple of years ago when COVID first hit and the stores were out of everything including pumpkin.

I was inspired to make this pie after reading The House on Harbor Hill......

This is the story of Delilah, a woman who was broken but strong enough to mend and her determination to help others who were broken to mend as well.

Delilah offers safe refuge to Tracey and her children and so the novel begins, switching between the breaking and healing of Delilah as a young black bride married to a rich white man in a time when, while marriage between races was no longer illegal but was not yet accepted and Tracey who found herself also stuck in an abusive relationship with a rich man.

It was an easy beach, or pool as the case may be, read and I enjoyed it.  Delilah does not like to have an empty house and is thrilled when Tracey and her two young children move into the House on Harbor Hill with her.  She loves spending time with the kids and one of the things she does with them is have them help her in making a Sweet Potato Pie.

I can't believe the summer and my pool time is winding down so quickly.  I AM NOT READY!!  In one week we are hosting the KLIK family reunion, first at a hall on Saturday and then at our house on Sunday for those guests still in from out of town.  

We have been invited to Bob and Cathy's for dinner on Sunday.  Monday we have a funeral to attend.  Tuesday we have friends coming over for pooltime and dinner.

So I am keeping this week's menu, light and easy as we concentrate on preparing for the gathering next weekend.

Sweet Potato Pie

Sweet Potato Pie

With warm spices and nutritious sweet potatoes, this easy pie is sure to be a hit.
Prep time: 10 MinCook time: 1 H & 30 MTotal time: 1 H & 40 M

Ingredients

  • 2 large sweet potatoes, about 1 pound
  • 1 stick butter, room temperature
  • 1 c. sugar
  • 1/2 c. milk
  • 2 eggs
  • 1/2 t. cinnamon
  • 1/4 t. nutmeg
  • 1/2 t. vanilla paste
  • 1 unbaked pie crust

Instructions

  1. Wash potatoes and cut into quarters. Place into a pot, cover with water and bring to a boil. Cook for 20-30 minutes, until easily pierced by a fork.
  2. Rinse potatoes under cold water and remove the peels. Place peeled potatoes into the large bowl of a stand mixer.
  3. Add the butter to the bowl, attach the paddle attachment to the mixer and mix on low speed until combined.
  4. Add sugar, milk, eggs, cinnamon, nutmeg and vanilla. Mix on low speed until combined. Increase speed and beat until smooth.
  5. Place the pie crust into a 9" pie plate and crimp edges.
  6. Pour the sweet potato mixture into the pie crust and bake in a preheated 350* oven for an hour, until puffed and a knife inserted into the center removes cleanly.

  2. I always think the texture is a bit different but same basic flavors (which I love---warming spices and all). Sounds like an interesting read.
