Renu of Cook with Renu is hosting today and was looking for some meatless, vegetarian options for barbecuing this summer. In the Midwest states BBQ means grilling as opposed to down south where BBQ is smoking meats, with or without sauce, depending on what State you are visiting.

I mixed some canned refried beans with some jarred salsa to spread onto tortillas, then sprinkled some Mexican Blend shredded cheese on top before adding a second tortilla and pressing them together.
We were celebrating our daughter's 18th birthday and I always like to include some vegetarian options when having a gathering. I had appetizers that were vegetarian and a Black Bean and Corn salad but my main courses were Salsa Chicken and Beef Enchilada Lasagna. Stay tuned for those recipes.
So I decided to make these bean and cheese quesadillas for a 3rd entree item. They are quick to put together but I made them ahead of time, placed them on a platter and covered them with plastic wrap before my guests arrrived. When it was time for dinner, these tasty treats take only minutes on a hot grill.
The dinner was a great success and everyone was happy and pleased, especially the birthday girl!!!
Yield: 12 Quesadillas
Grilled Bean and Cheese Quesadillas
Refried beans, salsa and cheese spread onto flour tortillas and grilled until gooey and melty with gorgeous grill marks. Perfect for a Meatless Mexican Monday Meal.

Ingredients
- 1 (15 oz) can of refried beans
- 1/2 c. salsa of choice
- 4 c. Shredded Mexican Blend Cheese
- 24 (6") flour tortillas
Instructions
- Mix together the beans and salsa until smooth.
- Divide and spread the bean mixture onto 12 of the flour tortillas.
- Sprinkle cheese over the bean mixture.
- Top with a second tortilla.
- Grill over med high heat until warmed through, cheese is melted and tortillas have visible grill marks.
- Serve with condiments of choice. I used extra salsa and sour cream.
