I baked up these little gems to put on our dessert table at our Parish Fish Fry. I had to sample one (or two), of course, and they were scrumptious.
Yield: 30 muffins
Mini Chocolate Chip Muffins
Perfect little pop in your mouth treats. These tender little morsels are chock full of mini chocolate chips but are not overly sweet.
Prep time: 5 MinCook time: 10 MinTotal time: 15 Min
Ingredients
- 1 c. flour
- 1 t. baking powder
- pinch of salt
- 1/3 c. sugar
- 1 egg
- 1/3 c. buttermilk
- 1/4 c. butter, melted and cooled
- 1/2 t. vanilla
- 3/4 c. mini chocolate chips
Instructions
- Whisk together the flour, baking powder and salt.
- In another bowl, whisk together the sugar, eggs, milk, butter and vanilla until well combined.
- Pour the wet ingredients into the dry ingredients and stir just until combined. Stir in the chocolate chips.
- Place batter into mini muffin tins that have been liberally treated with baking spray.
- Bake in a preheated 350* oven for 10-12 minutes, until a toothpick inserted in the center removes cleanly.
