French bread and diced apples lightly sweetened with maple syrup and brown sugar, flavored with cinnamon, baked up in custardy goodness.  Perfect for Breakfast, Brunch or Brinner.

French Toast Casserole

There are so many things that I love about French Toast Casseroles:
  • They are great for using up old, stale bread of any sort
  • They can be made ahead of time and just popped into the oven in the morning
  • They are hearty enough to be served for breakfast, brunch or brinner
  • You can call them Bread Pudding and serve them for dessert.
  • They can stand alone, be a great side dish or partner with whatever breakfast foods you love.
  • They are a complete one pan meal, with items from each food group.
  • They are easy.
  • They are scrumptious.
We celebrate Meatless Mondays in our house and Brinner is often served as it is so easy to stay meat free with breakfast foods.  This particular French Toast Bake is a family favorite.  I used apples in this recipe but I also like using other fruits as I did in this Blueberry version with a streusel topping.

Some other favorites are when I have leftover Raisin Bread as in this French Toast Casserole or leftover Stollen Bread during the holidays. 

As I write this post I am looking out the window watching the snowfall.  The forecast is calling for over a foot of snow before it stops....Perfect for browsing all the recipes being shared today and finding some great breakfasts to keep us warm and provide the energy needed for shoveling.

  1. I'd have called this bread pudding and it would have disappeared as soon as my husband saw the pan! He LOVES bread pudding!

  3. French toast, bread pudding, strata ... all are versions of the same idea: using stale bread with eggs, sweet or savory. Yours looks delicious: I love it with apples.

    In France as you probably know, the name of these dishes is "pain perdu" -- meaning "lost bread," that is bread that would be thrown away if you didn't make something out of it. Since real French bread goes stale in 4 hours, this is a challenge.

  5. I've yet to try making bread pudding at home. This one with apples sounds really good. Will have to give recipe a try for brunch.
