Most children are back in school again, either in person or virtually. Summer has come to a close. The sun is setting earlier and those long, lingering nights relaxing on the deck are disappearing and being replaced by homework and extra-curricular activities.
One of my favorite new finds at Costco is an organic quinoa and brown rice mixture that comes in pouches. You place that pouch in the microwave for 90 seconds and you have a wonderful, nutritious, whole grain side dish that is perfect with this stir fry.
Ground Beef Stir Fry
Ingredients
- 1 lb ground beef
- 5 oz. sliced mushrooms
- 2 carrots, scraped and sliced
- 1 red bell pepper, seeded and diced
- 5 oz. snow peas
- 1 c. beef broth
- 2 T. cornstarch
- 1/4 c. tamari
- 2 T. honey
- 1 T. sesame oil
- 2 T. ginger paste
- 3 cloves garlic, minced
Instructions
- Heat a wok over medium high heat. Add the beef and cook, stirring and breaking it up, until browned and crumbly, about 5 minutes.
- Add the mushrooms, carrots, snow peas and peppers. Cook and stir for a few minutes. Remove 2 Tablespoons of the beef broth to a small bowl and add the remainder to the wok. Bring to a boil.
- Whisk the cornstarch, honey, oil, tamari, ginger and garlic with the 2 Tablespoons of broth. Stir into the wok and cook until sauce is thickened and glossy and vegetables are crisp tender.
- Serve over rice.

It was perfect Kalyani. There are those that think perhaps we should wait until the vaccine is available for children. My granddaughter is still being home schooled.
DeleteWith the days getting colder, we naturally crave for food that has a bit of heat from ginger and chilis. With the generous amount of ginger in the stir fry, must be really tasty.
