Apple and Zucchini Muffins #MuffinMonday

A few years ago I was given fruit trees as a birthday gift.  This year, I got my first apples. Only 6  and they were small but, added to the zucchini I had from my neighbor, they made delicious muffins and quick breads.

They take only minutes to mix up and less than a half hour to bake.  You can take all those little bits and pieces of items in your pantry and refrigerator and add them to your batter to make your muffin into any flavor you desire.

Breads and Muffins

The recipe I am sharing with you today was adapted from one found in Taste of Home.  It made enough batter for 12 muffins, 6 mini loaves, 1 full loaf and 4 small loaves.  My freezer is filled with these lovelies for enjoyment until next season.

Apple Zucchini Muffins and Bread

Apple Zucchini Muffins and Bread

Preserve your garden bounty of apples and zucchini by making this delicious batter that can be baked into muffins and/or bread form. These muffins and breads freeze beautifully and taste like you just made them that morning.

Ingredients

  • 4 c. flour
  • 1 T. baking soad
  • 1 1/2 t. cinnamon
  • 1/2 t. nutmeg
  • lg. pinch of salt
  • 5 eggs
  • 1 1/2 c. canola oil
  • 2 c. sugar
  • 1 c. packed brown sugar
  • 1 T. vanilla
  • 2 c. shredded, unpeeled zucchini
  • 1 c. shredded, peeled apples
  • 1 1/2 c. pecan pieces

Instructions

  1. Combine the flour, baking soda, cinnamon, nutmeg and salt in a large bowl.  Make a well in the center and set aside.
  2. In another bowl, whisk the eggs.  Add the sugars and vanilla.Pour into the well of the dry ingredients and mix just until blended.  Stir in the zucchini, apples and nuts.  
  3. Divide into muffin cups and bread tins that have been treated with baking spray.  Bake in a preheated 350* oven until a skewer inserted removes cleanly, approximately 20-25 minutes for muffins and mini breads, 40-45 minutes for small loaves of bread and 55-60 minutes for large loaves of bread.

  1. Love Taste of Home, they have the best recipes! We're thinking about putting in fruit trees next year, apple and pear, any advice?

    1. We had apple and pear that we planted at our old house. The pear trees were very prolific every other year. The apple trees never took off. Here we have 2 pear, 2 apple, a prune plum and a peach tree. Planted 3 years ago. 3 pears this year that never matured and the few apples. Fingers crossed for next year.

  2. How exciting that your apple tree has started to bear fruit! We planted a pecan tree last year and I hope I live long enough for it to give me pecans. It grows soooooooo slowly! Love the apple zucchini combo!

  5. Both zucchini and apples would make it soft and moist. Great idea to have both in this recipe. Delicious! I am going to try soon.
