Carrot Pineapple Mini Loaves #SpringSweetsWeek

I received this wonderful selection of produce from our Melissa's for use in developing recipes.  See those little kiwi berries on the left?  I had never heard of kiwi berries.  My Teen walked in, spied them and popped one in her mouth.  The next thing I knew she was taking the clamshell into the bedroom with her.  Not one of them made it into a recipe.

Those adorable kumquats in the center?  They got candied and were turned into a cocktail.  I am not sharing that cocktail this week but stay tuned because it will be coming soon.  The rainbow carrots became this scrumptious, savory Carrot Tart.

A couple of those carrots were also combined with the pineapple to create these adorable little loaves of bread using a mini loaf pan that was provided by sponsor, Circulon.

It is so much easier having all of these little loaves in one pan instead of working with 6 individual pans.  The loaves cooked up evenly and released perfectly.

Carrot Pineapple Mini Loaves

Carrot Pineapple Mini Loaves

These delicious little mini loaves are full of fresh pineapple, carrots and pecans. Perfect for breakfast, snack or dessert. It is just as nutritious as it is delicious.
Prep time: 15 MinCook time: 50 MinTotal time: 1 H & 4 M

Ingredients

  • 3 c. flour
  • 2 c. sugar
  • 1 t. baking soda
  • 1 t. cinnamon
  • 3/4 t. salt
  • 3 eggs
  • 3 carrots, shredded
  • 1/2 fresh pineapple, cored and crushed
  • 1 c. canola oil
  • 2 t. vanilla
  • 1 cup pecan pieces, coarsely chopped

Instructions

  1. Combine flour, sugar, baking soda, cinnamon and salt.  Set aside
  2. In large bowl of stand mixer, fitted with the paddle attachment, beat the eggs.  Add the carrots, pineapple, oil and vanilla.  Mix until blended.  Turn the speed to low and stir in the flour mixture just until combined.  Stir in the nuts.
  3. Place batter into 6 mini loaf pans that have been treated with baking spray.  Bake at 350* for  40-50 minutes, until a skewer inserted removes cleanly.
  4. Cool in pans on wire rack for 10 minutes before removing to wire rack to cool completely.

  7. I used to work at the restaurant where we made these, but into muffins and called them morning buns (which I know they are not). Seeing this post brought back memories.

  8. These would be great sliced and toasted for breakfast spread with some cream cheese. I love the mini loaves but I have a small appetite and can't even eat one, so sliced is great.
